Even More Herb Cookies...Lime Basil Biscotti


Yep...I'm continuing my herb cookie craze with Biscotti this time. A few posts ago I made Lime Basil Shortbread Cookies and I got to thinking about this combo with Biscotti. I mean, what the heck, I just made Lavender Honey Biscotti and that turned out very good so I figured I'd give this a try! The lime flavor is very subtle , so far, but maybe by tomorrow it should be even more intense. The basil flavor doesn't really come through much. You could make it more "limey" by drizzling the biscotti with a lime glaze made from a little lime juice mixed with confectioners sugar. So, give it a try for a new twist on Biscotti...call it Summertime Biscotti...or something ...whatever!! ( This Biscotti recipe, you may notice, does not use any butter or oil so it has a wonderful "crunch").


Lime Basil Biscotti

Preheat oven to 350. Line baking sheet with parchment paper.


2 1/2 cups A.P. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
3 large eggs
1 cup sugar
1 1/2 tsp. vanilla extract
1/2 cup finely chopped sweet basil
2 tbsp. lime zest
2 tbsp. sugar and 1 tsp. lime zest ( for sprinkling on top before baking)


In a large bowl whisk flour,baking soda,baking powder,salt. Add basil and set aside.
In large mixing bowl, beat eggs and gradually add sugar til mixture is smooth and fluffy.
Beat in vanilla and add lime zest and mix til just combined.
With mixer on low, stir in flour mixture and mix til just combined.
Drop batter onto parchment lined sheet. ( You can divide dough in half for 2 logs.)
Shape log (s) with damp fingers.
Sprinkle tops with "lime sugar".
Bake for approx. 25 min. ( or until log springs back when touched with finger).
Let cool about 10 minutes.
On cutting board, slice log(s) and place slices back on baking sheet. Bake about6- 7 minutes, turn slices over and bake other side another6- 7 minutes.

Cool on wire cooling racks.

Store in air tight container. Try with some cool, creamy ice cream or sorbet!! Yum!!

More Herb Shortbread Cookies


I found these wonderful Apricot Rosemary Cookies and made them one day last week. They came out great but I felt they were too thick so I made them again today and rolled them out thinner and they were just perfect. The cookie is made with a little bit of cornmeal in the batter which makes it taste more like a cracker than a cookie. At one of the farmers markets where I set up there is a vendor who sells delicious and unusual flavors of homemade jams and jellies. She had a jelly with rosemary in it and we put the Rosemary cookie with it and ..Wow!!.. it was awesome!! So, I suggest you give this recipe a try!!

Blondies, again...mine vs. theirs

Mine on the right. ATK on the left( see the white chocolate chip?) They do look almost exactly the same. (The color on both is a nice caramel color but, alas, it's a rainy no sunlight kind of day so the photo makes them look very pale.)



Well, here it is another bakeathon Friday, with 3 markets to bake for this weekend...(the weatherman better be right about it being a sunny one!!), and I decide, once again, to do a comparison of my blondie recipe vs. America's Test Kitchen blondie. I don't really know why I pick the busiest day to do this...or, for that matter, why I even do this at all!! I guess I think maybe there's a better recipe than the one I'm using out there and I need to know !! But anyway, here goes.


The 2 recipes are very similar. The ATK recipe. uses almost the same ingredients but different amounts than mine. Where I put in butterscotch chips, semi sweet chips,pecans and toasted coconut, they only put in semi sweet chocolate chips , pecans and white chocolate chips. They use 2 whole eggs and I use one whole egg and one egg yolk. I will say that I like the fact that theirs makes quite a lot more blondie than mine. I bake mine in a 8 x 8" pan and theirs is baked in a 9 x 13" pan so with a little more amounts, theirs makes more.


As you can see in the photos, they both look almost identical.And...drumroll please...the taste...even though mine was much sweeter, the addition of butterscotch chips gave it more flavor so I still like mine better. So I'm thinking... their recipe with more stuff in it!! Sounds good to me!





My blondie recipe:

1/2 cup butter ( melted and cooled)
1 cup firmly packed light brown sugar
1 egg
1 egg yolk
1 tsp. vanilla
1 cup AP flour
1/2 tsp. baking powder
1/8 tsp. soda
pinch salt


Add ins:
1/3 cup butterscotch chips
1/3 cup toasted pecans( roughly chopped)
1/3 cup toasted coconut
1/3 cup semi sweet chocolate chips

Butter and line bottom with parchment paper a 8 "x 8" pan. Set aside.
In small bowl combine flour, baking soda, baking powder and salt. Set aside.
In a large bowl, whisk butter and sugar.
Add egg, yolk, vanilla and whisk til combined.
Add flour mixture to butter mixture with spatula and stir til just combined.
Add chips, pecans, coconut and butterscotch chips and just gently stir to combine.
Pour into prepared pan and smooth out with spatula or knife.
Bake at 350 for 23 - 25 minutes, or til toothpick comes out clean.
Cool completely in pan ( at the least one hour) and turn out onto cutting board. Cut to desired sizes.

Basil Lime Shortbread Cookies


Lately I've been kicking around some interesting flavors for my shortbread cookies. Last month as I was sitting in my friend Janet's car at the antique show in Brimfield,( taking a break from walking the fields...whew!!...I'm still tired from all that walking!!) I noticed she had a stack of magazines, so I looked through some of them and came upon this recipe. I guess, as the summer is almost officially here, I'm inspired to use some fresh herbs in my baking and this recipe sounded so great! How could you miss with basil and lime?!

I love making shortbread cookies for several reasons. First, they are so buttery and just so very yummy!! And second, they are great, in my humble opinion, to bake because you can make the dough ahead and refridgerate and use when you'd like. And lastly, once baked, shortbread has a longer shelf life than most other cookies because they just improve in flavor with time ( just be sure to keep in an air tight container )...so what's not to like!?? So...here's the recipe.


Basil Lime Shortbread Cookies


3/4 cup unsalted butter ( room temperature )
1/2 cup confectioners sugar
1/4 tsp. vanilla
1/4 tsp. salt
1 1/2 cups flour
1/4 cup finely chopped basil
2 tbsp. lime zest ( finely grated )
Lime sugar for sprinkling on top of cookies before baking.( Lime zest mixed with sugar).

Cream the butter and sugar til light and fluffy.
Beat in the vanilla and salt.
In a small bowl, toss flour, basil and lime zest.
With mixer on low speed, add the flour mixture to the butter mixture til it forms a ball.
Wrap dough in plastic wrap and refridgerate at least 2 hours.

Preheat oven to 350. Line baking sheet with parchment paper.

Once dough is out of fridge for a little while and has softened a bit, roll on lightly floured surface ( I roll out between 2 pieces of plastic wrap ). Roll out to about 1/4" thickness. (If dough is too sticky, you can always put it back in the fridge to chill a bit.) Cut out desired shapes and place on parchment lined sheet. Sprinkle with lime zest sugar. Bake approx. 10 minutes ( mine took a bit longer so watch for edges to be slightly browned).


They do get better flavor the next day. Perfect with some refreshing lime sorbet!! Yum!!

Weekend of Baking

Just the beginning of a long baking weekend! Blondies, oatmeal raisin and snickerdoodles...oh my!!


Whew!! What a weekend of baking!! I couldn't even imagine how I would get through ( and survive! ) this long holiday weekend with all the baking I needed to do! My usual bake"athon" on Friday is now doubled due to the second farmers market that just began in Wrightstown Saturday. Now I have to bake for 2 markets on Saturdays and I'm not complaining...really!!...but it is a lot of work for one baker and one oven in one tiny kitchen!!



So what do I decide to do? I decided to try out 2 new chocolate chip cookie recipes because I have this crazy idea that somewhere out there is yet another better recipe than the one I am currently using. With that in mind I decided to try one that yielded a flat cookie with, in my opinion, way too many chips in the batter and the second...and my winning choice....a fatter cookie that had a batter that was so quick and easy to prepare. And the cookie was wonderful, chewy and crunchy and although it calls for chocolate chunks, I used chips and they were great!( And yes, I tried the New York Times Chocolate Chip Cookie but it's a bit too involved) So I baked and baked and baked some more...enough for 3 farmers markets and an auction on Monday!! Yes, I need to rest, myself and my oven.

Coffee Spice Cake with Mocha Butter Frosting


The cake stuck a bit to the bottom of the cake pan but it still tasted great!! The Mocha Butter Frosting had a wonderful coffee flavor.



As promised, this is the recipe for the Birthday cake I made for my son yesterday. The absolutely huge volume of recipes is called "The Encyclopedia of Cooking in 24 Volumes" and dated 1949...and let me tell you this is one heavy book!! Each category is it's own little booklet and I'm tempted to take out just the cake and cookie booklets to make it more managable! I really want to try some of the other cake recipes in the book such as, Spiced Devil's Food Cake and Sweet Potato Cake ! Sounds so good!!


The one issue I have with almost all the cake recipes I noticed is that they call for shortening rather than butter...was there a butter shortage back then? If anyone knows the reason, I'd love to know. I would like to try this recipe again replacing the shortening with butter but for now, this is the original recipe.



Coffee Spicecake: ( this is exactly the title)

2 1/2 c sifted cake flour
3 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ginger
1 1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
3/4 cup shortening
1 1/2 cups brown sugar
1/4 cup molasses
3 eggs, well beaten
3/4 cup cold strong coffee




Sift flour, baking powder, soda, salt and spices together 3 times. ( I actually did this! )
Cream shortening with sugar until fluffy.
Add molasses and eggs and beat thoroughly.
Add dry ingredients and coffee alternately in small amounts, beating well after each addition.

Pour into greased pans and bake in 350 oven for 30 minutes. Makes 3 ( 8") layers.( I made mine in 2 (8") square pans.)



Mocha Butter Frosting:

1/2 cup butter
3 cups confectioners sugar, sifted
3 tbsp. cocoa
4 tbsp. cold strong coffee
1 tsp. vanilla


Cream butter. Add remaining ingredients and continue creaming until mixture is well blended and fluffy. Will cover tops and sides of 2 ( 8" ) layers.

Coffee Spice Birthday Cake ...and Chicken Soup ?

I gave myself a day off today from my usual Sunday farmers market to take a baking break ...or so I thought and get some much needed rest. My friend , Janet and I got back late Thursday from the Brimfield Antique/Flea market shows going on there all week, We walked all day for hours !! It was exhausting but fun. I only came home with a few things but Janet found lots of pink stuff...her specialty!



Even though I took time off from my business baking, I still managed to make a birthday cake and chicken soup! I called my older son, Jim, to wish him a happy birthday today only to find he was sick in bed...so I couldn't not cook or bake for my child. Nothing like chicken soup to make you feel better!! So I made Ina Garten's Chicken Stock Recipe but ...geez...3 whole chickens!! really Ina..that's a bit extreme !! I don't even have a pot big enough for 3 whole chickens!! I made one third the recipe, using one chicken and all the wonderful herbs and veggies she suggests. It did come out great!! It has a great rich flavor and color.


As for the cake, I love to collect old cookbooks and I recently recieved, from a friend, an old volume from 1949 of recipes. One of the cake recipes interested me so I thought I'd give it a try. It's for a Coffee Spice Cake with Mocha Butter Frosting. It turned out really very good with nice spice flavor, with molasses in the recipe. The frosting has coffee and cocoa and it had a good coffee flavor. ( I'll post the recipe tomorrow, promise! ).So that's some of what my little boy...I mean..my oldest...got for his 32nd birthday!! Yikes...how'd he get to be 32?! Where'd the time go!
